I know this sounds really condescending, but you could always just play the game better.Get Charon some better gear, make sure he has plenty of stimpaks and always be on the lookout for dangerous shit for Dogmeat (landmines, tripwires and missile launcher wielding enemies).

Should a threat come up neutralize it first, and tend to Dogmeat's wounds in the middle of the fight to keep him up.If the game is too difficult you can always just turn it to Easy/Very Easy. Or go about using an exploit, my personal favorite being the RL-3 glitch that allows you to hire every single companion in the game at once. Just pack on an extra follower or two to even the odds, switch things up as you see fit. Embrace challenge.

Fallout 3 Dead Companion

Get RL-3, tell him to wait, speak to him but tell him not to follow you yet but to talk about something else, and then fire him. Wait until he's back in Canterbury Commons and rehire him. The game won't remove the companion slot he originally used, so when you fire him you obtain one and lose none when rehiring.

Each time you do this you can hire one new companion. Simply give away water or hack terminals in Megaton to adjust karma as needed. This way you can actually form a gang in the Wasteland and have as many people as you can afford follow you. It's like Fallout 1 and 2 where you can have 5-6 people at once.

Takes a bit of challenge away but that's why I mentioned it, OP is apparently having problems with his game.

Howard went on to explain that your dog can get seriously hurt. In fact, if Dogmeat receives enough of a beating, he can become incapacitated. Thus, players should still be careful with their companion, but they need not worry too much.
